Description
Object of activities: manufacture of confectionery.
Typical work tools: mechanical and automated confectionery equipment, tools and instruments, technology cards, electric stoves, cleaning agents, etc.
Typical working conditions: working indoors, near high temperature equipment, with electrical appliances; possible work in shifts.
Additional information: in its activities, the confectioner follows the requirements of occupational safety and health, ergonomics, occupational hygiene, fire safety and environmental protection, Technical Regulation on the Description, Production and Presentation of Flour Confectionery Products, approved by the Minister of Agriculture of the Republic of Lithuania in 2014. October 28 by order no. 3D-794 “On the Approval of the Technical Regulation on the Description, Production and Presentation of Bread
and Cake Pastries and the Technical Regulation on the Description, Production and Presentation of Flour Confectionery Products”, healthy nutrition requirements. Qualified individuals will be able to work in restaurants and other catering companies, confectionery workshops, rural tourism homesteads.
Competences of qualification:
1. Prepare and clean working place.
2. Take care of confectionary equipment and inventory.
3. Mix and knead the non-yeast dough.
4. Make non-yeast dough products.
5. Mix and knead the yeast dough.
6. Make yeast dough products.
7. Choose and prepare ingredients for making confectionary products. 8. Make semi-finished confectionery products.
9. Make sugar confectionary products.
10. Make creamy confectionary products.
11. Make decorative elements.
Competences of the specialization “Lithuanian cake šakotis (spit cake) making”:
1. Choose and prepare ingredients for baking the Lithuanian cake šakotis (spit cake).
2. Bake Lithuanian cake šakotis (spit cake).
